Fusion food - I'm not a fan. Don't fool around with a winning formula. I mean, sometimes it's done well but often it's just screwed up.
One of the things that shits me about it is that a lot of restaurants here have Japanese fusion food which means taking some raw fish then drowning it in some rich and heavy sauce. When they call it sushi or sashimi. Which is blatantly untrue. It's just raw fish with a sauce on it.
You see it with other foods too. Weirdly favoured tiramisu with the ingredients switched around is another that really bugs me.
At what stage can you mess around with fusioning a food and it stops having any claim to the original name and becomes something else altogether?
If you are just cooking and eating food yourself, then can all call it whatever you want but when you put something on a menu and charge money for it, surely it should have some connection with the name people recognise.
Am I being too finicky here? Maybe food needs to evolve but I want to know what I'm getting.
